Fried Catfish

Cowboy Kent Recipe
Ingredients:
Catfish Filets (this recipe works well for about 2-3 large filets)
1 cup cornmeal
1/3 cup all-purpose flour
1 - 1 1/2 tablespoons Red River Ranch Original Seasoning (or all-purpose seasoning)
1 tablespoon cornstarch
1 teaspoon baking powder
1 tablespoon buttermilk powder
1 cup warm water
Canola, peanut or other fry oil
Equipment:
Dutch Oven
Oil thermometer
Scooper for oil
Directions:
In a medium bowl combine the cornmeal, flour and seasoning. Set aside.
In a small bowl, combine the cornstarch, baking powder, buttermilk and warm water.
Cut the catfish filets into thirds. Dip in the wet mixture and then dredget through the flour mixtures. Repeat.
Heat the oil to 350 degrees in a cast iron Dutch oven or deep fryer.
Fry the catfish until golden brown and crust is crispy.
Let cool on a paper towel or wire rack.
